The story

From the paleta cart.

The idea for Paleta Weisse comes from the paleterías and paleteros of Oak Cliff. This series brings the flavors of those frozen treats to a light, tart Berliner Weisse.

For this one, we brew with tangerine and vanilla over a base of malted barley and wheat. Lactose adds a little sweetness. The result is citrus up front, a soft vanilla note, and a tart finish.

Bright citrus up front, inspired by the paletas of Oak Cliff.

Vanilla

A soft, rounded note alongside the tangerine.

Malted barley & malted wheat

The grain base beneath the fruit, with a light wheat-beer body.

Hops

A little bitterness to balance the fruit and sweetness.

Lactose

Milk sugar adds a little sweetness and a softer finish.

Yeast

Ferments the beer, turning sugars into alcohol and carbonation.
